It is known as L'escargot Bleu' sister from Broughton street in the new town of Edinburgh.
We, Betty Jourjon & Fred Berkmiller gave a contemporary feel to this lofty upstairs restaurant with French music playing in the background.
Full size advertising posters adorn the walls accompanied by vintage monochrome photos. If you get a seat at the prime tables, next to many windows, you can dream of being in the Bohemian Latin Quarter or the rambling cosmopolitan Marais districts of Paris.
Mull over the menu with a glass of Apéritif Poire William or Ricard and you will find dishes that are simple, traditional and in rhythm of the seasons.
Provenance is paramount.
Nothing gets through the kitchen door unless directly sourced by Fred.
Only one rule : quality, quality and quality. 2/3 produced in Scotland, 1/3 imported from France, Fred knows how to dilate your palate.
Staff balance cast iron pots and plates with skills. Olivier Carles, manager at Blanc, will serve "Lapin chasseur" or "Poisson du jour"to hungry diners.
Pop in on a Tuesday evening and have a bash at raclette.
