When Fred was sourcing these little delicacies prior the opening of his épicerie, he was faced with a real dilemma : how to select the best artisans chocolatiers ? There is more than one technique probably. Fred chose a simple one : he tasted them all!
So, after days of tasting, maybe weeks, Fred is happy to introduce in Scotland maison Verdier and maison Buessent.
Artisans chocolat Verdier, based in Pau not far from Pyrenées present pralines, truffles and Guinette (cherries) with Armagnac beautifully.
Artisans Buessent Lachelle have their own cocoa plantation, on the banks of the Napo River not far from the Columbian border, in the heart of equatorial Peru.
The blocks of chocolate that L’Epicerie sell have to be broken with a hammer as they are so thick, sold by weight, you can be as frugal or as greedy as you like …
